The Highland Cow (pronounced "Highlan' Coo'" in Scotland) is native to Northern England and Scotland. They are known for their thick and messy coat of long orange hair, which allows body heat to be retained without as much fat. The result is a highly desirable lean meat.

According to the Midwest Highland Cattle Association, Highland Cows were first introduced to North America in 1884 to improve the ruggedness of the beef herds of the time. It is true that Highland cattle are able to withstand extreme conditions, making them very at home in the Great Lakes basin. Though the most common color of Highland is red, they are also seen in black, yellow, white, silver and specific livestock color schemes like dun and brindle. A unique characteristic of Highlands is the fact that both males and females grow horns, though the females' set is much smaller.
